s Spain recipes tortilla de patatas(spanish omelette) 3 eggs 1small onion 2 medium sized potatoes oil pinch of salt Chop up the onion and fry till golden. Peel and finely chop the potatoes and fry gently in covered pan until tender but not crisp. Sieve onions and potatoes to drain out any excess fat. Add the well-beaten eggs to the onions and potatoes , mix well, season to taste and fry turn over a by slipping onto a plate or lid and returning to reoiled pan to cook on the other side. All Spanish omelettes are served flat,not rolled.
